125 g 00 flour
180  g  pre-cooked  polenta cakes  / leftovers from the previous day
3 eggs
2 organic oranges
50 g caster sugar
50 g butter
Oil, for frying  (to  taste)
Salt (to taste)

Preparation method

Put the butter,  125 g of water and a pinch of salt into a saucepan. Bring slowly to the boil, remove the saucepan from the heat and add all the flour.
Vigorously stir using a whisk and simmer for 2-3 minutes. Pour the mixture into a bowl let it cool and then  fold in the eggs. Grate the zest of  one orange and the polenta cake as well by using a grater with large holes; add them to the sugar in the bowl and mix  all the ingredients together.
Heat plenty of oil in a frying pan, pour the mixture little by little with the help of two tea  spoons, fry the little pancakes until they puff up and turn  golden brown.
Drain  and let them dry on paper towel. After that coat  them with the remaining sugar and grated zest mixture.
