Friend dices made of polenta e crescenza cheese

Servings:  4 persons


250 g flour for quick polenta
½ l milk
200 g crescenza cheese
5-6 leaves of sage
2 eggs
30 g grated Parmesan cheese
breadcrumbs, to taste
peanut oil, to taste
salt and pepper, to taste


Pour the milk into a casserole, half liter water and a pinch of salt. Add the sage leaves – previously washed and cut julienne-style. Bring the mixture up to boiling temperature and immediately drop the flour into it little by little, whisking continuously to avoid crumbs. Cook the polenta following the instructions on the package.
Remove the polenta from the fire, mix in the crescenza cheese cut into small pieces, a bit of ground pepper, the Parmesan cheese and stir continuously until all ingredients are well-blended. Check the salt, and pour the polenta upon a cooking parchment, roll it out with the back of a knife shaping the polenta into a  2 cm thick rectangular form; let it cool.
Cut the polenta into dices of the same thickness. Drop them into beaten eggs and then roll them out in breadcrumbs. Fry them in deep oil until golden brown, put them upon absorbing paper and serve them still hot, accompanied with crescenza cheese.
